For the dressing:
1/2 cup red wine vinegar
1/2 cup extra virgin olive oil
3 garlic cloves, minced
1 tablespoon of honey
1 tbsp dried Italian seasoning
1/2 teaspoon of salt
For the pasta salad:
450 g pasta
470 g cherry tomatoes, cut in half
3/4 cup chopped grilled peppers or roasted red peppers
1/2 cup chopped red onion
1/4 cup chopped parsley
340 g mini mozzarella balls, drained and cut in half (22-24 balls)
100 g black olives, drained and sliced
Place a large saucepan full of water on high heat and bring to a boil. Add a large spoonful of salt to the water. Then fold in the dry pasta. Cook them according to package directions, usually 6 to 8 minutes. Drain the pasta and rinse it in cold water in a colander. Shake off excess water and place the pasta in a large bowl.
While the pasta is boiling, whisk all the dressing ingredients in a small bowl. Put them aside. Then chop all the salad ingredients.
Pour the tomatoes, chopped peppers, red onion, parsley, mozzarella balls, and olives over the pasta. Pour the dressing on top and toss well to coat. Taste, then season with salt and pepper if necessary. Now the salad is ready to serve.
